We kicked off summer at BottleRock in Napa over Memorial Day weekend, where we hosted Happy Hours in the VIP Village with charcuterie spreads and wine pairings, highlighting fresh seasonal fruit and local producers. You’ll want to recreate these for all your al fresco dining this season so grab a blanket and let us pack your picnic basket (hint: it’s got handles and is recyclable).

Pairing 1: Sweet & Spicy

On the plate

  • Blackberries — Rich and sweet, blackberries pair well with apricot and plum, black pepper, cinnamon, and other berries.

  • Big Sur from Stepladder — A small format ash coated triple crème made of mixed cow and goat milk. The paste is smooth, rich yet tart, and stays firm as the cheese matures.

  • Duroc Salami from Fatted calf — The flavor of the pork is highlighted by Napa Valley red wine, Piment d'Ville (red pepper), fennel pollen, and allspice.

  • N’duja Spicy Prosciutto Spread from La Quercia — A delicious spreadable blend of La Quercia cured meat spiced with American red pepper, it marries rich umami to abundant heat.

In the glass

  • Gravitas White Blend from Bonny Doon Vineyards — With aromas of magnolia flowers and white peaches, a hint of ripe pear, and a touch of lavender honey, Gravitas follows through with a light, deft, fresh acidity on the palate.

  • Zinfandel from Chacewater Winery & Olive Mill — Aromas of strawberry, red cherry, white pepper and laced with smoky vanilla oak. The palate has characteristics of rich fresh red berries, dark cherry and plum, with a finish hinting at oak and pepper.

Pairing 2: Creamy & Peppery

On the plate

  • Cherries — Pair well with black pepper and cinnamon notes, citrus and stone fruits, almond and pistachio, and pork.

  • Ragged Point from Stepladder — This salty, butter triple cream has a rich, decadent mouth feel.

  • Red Wattle salami from Fatted Calf — The flavor of the pork is highlighted by Napa Valley red wine, Spanish pimenton picante, smoked paprika, and a bit of black pepper.

  • Pesto Bianco Savory Lardo Spread from La Quercia — This 9-12 month aged lardo is blended with sea salt, black pepper, rosemary, and red chili flake.

In the glass

  • Organic Pacific Redwood Cabernet Sauvignon from Frey Vineyards — This full-bodied wine is richly fruit forward, with big flavors of cherry, cocoa, and clove.

  • Avinyo Petillant Vi D'Agulla from Avinyó — This low-alcohol, spritzy white wine has delicate notes of honeysuckle, tart grapefruit, lime, and a nice minerality.

Pairing 3: Floral & Smoky

On the plate

  • Blueberries — Their fruity peach, vanilla, and floral notes pair well with other berries, citrus, mango, honey, peach and apricot, tomatoes, and artichoke.

  • St. Pat from Cowgirl Creamery — These rich, creamy wheels are wrapped in wild nettle leaves which impart a light, smoky artichoke flavor.

  • Prosciutto Americano from La Quercia — Dry cured with sea salt and aged for 9-12 months, resulting in a sweet, clean flavor and a floral minerality.

In the glass

  • Sonoma Sauvignon Blanc from Quivira Wine — Fruit is front and center with tropical aromas like mango, pineapple, passionfruit, and guava. The palate is crisp and leads into a mouthwatering finish.

  • Merlot from Camp Wines — Aromas of raspberries and herbs, with lots of soft, velvety red fruit flavors.

We complemented these pairings with a variety of crisps and flatbreads from Rustic Bakery. A fresh baguette, torn by hand, also works well.
