Ah, autumn in the Bay. There’s the single red leaf on your neighborhood block that inspires everyone in your zip-code to pull out their winter wardrobe. The 3-hour commute to work after the season’s first “rain.” And warty gourds galore. Most importantly, we all collectively agree: it is once again socially acceptable to eat pie for breakfast.

But who actually has time to bake pie for breakfast when there’s hardly enough time in the morning to make toast? Meet the galette: the 15-minute, three-ingredient, one-dish-to-wash, next-generation pie.

When you start with flaky, pre-made pie dough and add in fresh, seasonal toppings, galettes are quick to assemble–– it just takes five minutes to roll out the dough and arrange your toppings––and they bake in 15 minutes. And since galettes come together so easily, there’s no need to stop at pie for breakfast: you can enjoy them for lunch, dinner, dessert, or even a late night snack. It’s the perfect opportunity to sneak pie into your weekly meal routine under unsuspecting pseudonyms like “pizza,” “flatbread,” and, of course (if you’re feeling fancy), “galette.”

Start with these simple instructions and then experiment with your favorite fall flavors, or follow along with our weekly menu:

1 Remove pie dough from box and thaw. Preheat oven to 400ºF.

2 Once thawed, unwrap pie dough and roll out into a rough 12-inch circle.

3 Leaving a 2-inch border, spread your filling evenly over the dough.

4 Fold over edges of the dough, making pleats.

5 Bake for 15 minutes.

6 Serve hot or at room temperature!

Once the house is empty and you’ve started your first of four laundry loads, fix up a savory pie for breakfast: go heavy on the bacon, which pairs splendidly with sweet, wilted chard.

1 Cut chard into one-inch strips and slice onion.

2 Cook bacon lardons in a pan over medium-low heat –– remove lardons and set on a paper towel to drain.

3 Cook onion and chard stems in bacon fat until caramelized. Add chard leaves and cook until wilted.

4 Add veggies to pie dough and top with bacon.

5 Fold edges and bake.
