How to make simple, perfect salmon
I love the simplicity of high-quality Coho Salmon, roasted to a flaky tenderness. It’s a mess-free way to get delicious salmon that becomes a protein-packed building block for healthy and flavorful dinners…the possibilities are endless!
Recipe & Tips for Roasted Coho Salmon
Pat the coho salmon filet dry to remove excess moisture with paper towels or a clean kitchen towel
Leave skin on while baking for an easy preparation that keeps fish moist
Line your baking sheet with parchment paper or aluminum foil for a quick cleanup
Ingredients
Wild Alaskan Coho Salmon Filet
Olive oil, approximately 2 teaspoons per filet
Lemon slices, optional
Salt and pepper
Directions
Preheat your oven to 375F. Place your salmon, skin side down on a parchment-lined baking sheet or oven-safe dish.
Pat coho salmon filet dry with a kitchen towel or paper towel. Drizzle with olive oil, coating both the top and bottom. Then season with salt and pepper and place skin-side down on a rimmed baking sheet or baking dish.
Top with lemon slices if using. Place in the oven and bake for 8 to 10 minutes, depending on the thickness of the filets. Coho salmon is medium-rare when it has reached an internal temperature of 120F at its thickest part. If you do not have an instant-read thermometer, you’ll know it’s done when it flakes easily with a fork. Add a couple more minutes of cook time if you prefer a more medium-well cooked texture.

Salmon Rice Bowls
I love serving salmon alongside Coconut Rice, avocado and cucumbers tossed with rice wine vinegar, a splash of sesame oil and toasted sesame seeds.
Salmon Tacos & Tostadas
If tacos are more your jam, try serving them on a warm tortilla or crispy tostada shell. Rest your flaked salmon on top of a smear of avocado creme, shredded cabbage slaw for crunch and a little fresh squeezed lime juice. Delicious!
Salmon Maki Rolls
Lastly, if you want to get the whole family involved with a maki roll-style dinner, put out toasted nori sheets, sushi rice or pre-steamed rice from the Good Eggs Kitchen, any fresh veggie stick and soy sauce for dipping. Let everyone join in and make their own salmon rolls.
